It was already about the forest chicken, so this time we will write about forest tofu. We mean puffballs, most of which are edible and delicious mushrooms. Their white, firm flesh means that people encountering them for the first time often do not associate them with typical mushrooms. As a result, many fine specimens remain in the forest, even though young puffballs are edible and valued by experts for their delicate flavor.

The most commonly collected edible puffballs

  • Giant puffball – the largest and most prized. It can reach the size of a beach ball, or even larger. The flesh of young specimens is white and firm.
  • Spiny puffball (pictured in the article) – small, covered with characteristic spines or warts. Very common in forests.
  • Pear-shaped puffball – often grows in clumps on dead wood and stumps.

The most important rule when collecting puffballs is to check their interior. Every specimen should be cut open. A mushroom is suitable for consumption only when its center is uniformly white, firm and resembles a cube of fresh tofu. If yellow, gray or brown discoloration appears inside, it means that the mushroom is already too mature and should not end up on the plate.

Puffballs are worth looking for from summer through late autumn. Although they most often appear from August to October, they can also be found earlier. They grow not only in forests, but also in clearings, along forest roads, in meadows, pastures and even parks. The giant puffball is particularly easy to spot; it can reach impressive sizes and resemble a large white ball lying in the grass.

Young puffballs have a mild flavor and work well in the kitchen. They can be fried in butter, breaded like cutlets or added to other mushroom dishes. Their delicate texture means that some people compare them precisely to tofu.

Mycologists nevertheless remind people to exercise caution. Checking the cut surface is crucial. Only a completely white interior indicates that the puffball is young and fit for consumption.

So, during your next trip to the forest, it is worth paying attention not only to mushrooms with caps. Perhaps right beside the path lies a white, underrated delicacy that most mushroom pickers leave behind.
