As early as 23 to 26 October, we invite all food lovers to an exceptional Tartare Festival, where classic cuisine meets finesse and every plate becomes a small work of art.

Original interpretations of tartare, prepared by a creative team of chefs, are an invitation on a journey—from the raw elegance of beef, through the delicacy of seafood, to plant-based poetry.

Beef – a classic in a new edition

Juicy beef tenderloin, topped with a fried quail egg, crispy leek hay and caper popcorn—an homage to tradition with a touch of daring. Delicacy meets the heat of sriracha… and it is already clear that this will not be an ordinary tartare.

Beef with a hint of brandy – for connoisseurs

For those who like flavour to have depth and character. Aromatic beef, golden potato sticks, creamy pickled-cucumber mayonnaise and a few drops of a dry adult beverage—here, every ingredient comes to tell its own story.

Seafood – tartare with an ocean wave

Blanched squid and tiger prawn, immersed in dashi broth with wakame seaweed—this is a version of tartare few would expect. Oriental, light and full of umami. Ideal for those who enjoy discovering new worlds on the plate.

Cod – a sea pearl of freshness

Cod loin, a hint of coriander, lime and hot pepper, enveloped in creamy fish mayonnaise. A subtle, aromatic and surprisingly elegant version. Here, the sea speaks in a whisper.

Vegan – tartare that needs no meat

Roasted aubergine, smooth tahini, Jerusalem artichoke chips and pickled vegetables—a composition so full of flavour that even meat-eaters will raise an appreciative eyebrow. Proof that tartare is not a form, but an idea.
