Mushrooms are not only tasty additions to dishes, but also a source of natural substances that may have a beneficial effect on our health. One lesser-known but interesting species is the hedgehog mushroom (Hydnum repandum), often found in our forests. In this article, you will learn where to look for this mushroom, when it is in season, how to identify it and what medicinal properties it has.
Where to look for the hedgehog mushroom?
The hedgehog mushroom prefers coniferous and mixed forests. It can be found in shady, damp places, often near pine or spruce trees. It can also be found near deciduous trees, alongside beech trees. This mushroom occurs mainly in Europe and northern Asia, and in Poland it can be found in various regions, especially in forests in the north of the country. It usually grows in groups, but single specimens can sometimes be found. In Bolesławiec, we managed to find it in a deciduous forest, right by beech trees.
When does it grow?
The season for the hedgehog mushroom usually begins in the second half of summer and lasts until late autumn—most often from August to November. This mushroom prefers damp conditions, so it can be found in large quantities after rainfall. It is worth remembering that the growing period may vary depending on the specific region and prevailing weather conditions.
What does the hedgehog mushroom look like?
Identifying the hedgehog mushroom is relatively easy thanks to its distinctive features. The fruiting body of this mushroom has an irregular, flattened cap measuring from 5 to 15 cm in diameter. Its surface is rough, and its color ranges from cream to light orange. Under the cap, instead of gills or pores, the hedgehog mushroom has spines—small, delicate projections that are its identifying feature. The flesh is white and has a pleasant, slightly nutty aroma. The hedgehog mushroom is edible, but it requires careful preparation to bring out its best flavor.
Before preparing it for consumption, it is recommended that the spines under the cap be removed. The projections come off easily when pressed with a finger and are soft and delicate enough that there is no risk of injury.
Medicinal properties
The hedgehog mushroom is not only tasty, but also a source of many valuable nutrients and health-promoting properties. It contains protein, fiber, B vitamins, and minerals such as selenium, zinc, and iron. Its medicinal properties are associated with anti-inflammatory and anticancer effects. Studies have shown that mushrooms, including the hedgehog mushroom, may support the immune system and act as antioxidants, helping to combat free radicals.
Thanks to its detoxifying properties, the hedgehog mushroom may also support proper liver function, and some recommendations point to benefits in the treatment of certain metabolic diseases.
