Nutrition and catering services technicians from Zespół Szkół Ogólnokształcących i Zawodowych organized a salad bar. It is a small business run by students. They take care of supplies themselves, weigh and measure ingredients, choose recipes, improvise, keep the books, and pay bills and taxes. They ensure order and cleanliness, and at the end they eat what they have managed to prepare.

Small businesses are part of a European Union project involving county schools. No two such businesses are alike. The students chose activities related to their field of study. The schools provide equipment—in this particular case, kitchen facilities—as well as specialist supervision.

The money, for example for ingredients, comes from European Union funds. The students do not have to contribute to their culinary experiments. If such a salad bar could operate for real and sell its products, it would certainly have no shortage of customers.

In addition, the students visit their project partners in the Czech Republic, and vice versa. They exchange experiences and compare how business activity is conducted in their countries. Small businesses also provide lessons in entrepreneurship.
