Slow Food is an international non-profit organisation whose manifesto defines its purpose as “protecting the right to taste”. It was founded in Italy in 1986 and from the outset focused on broadly understood protection of and support for small regional food producers—particularly producers of original food made in ways not found elsewhere in the world; traditional, healthy food that is, unfortunately, at risk of disappearing as a result of the increasingly aggressive expansion of what is known worldwide as fast food.
