Healthy Food, Healthy Person. A Guide to Positive Nutrition, Part 2

In the first part of the guide, we wrote about what should be removed from cupboards and the fridge in order to eat healthily. In the second part, we will say what you should stock up on.

Vegetables and fruit
After clearing the cupboards and fridge of harmful products, we go shopping. We head to the greengrocer, where we stock up on fresh vegetables and fruit. If we know a farmer nearby who we are certain grows without chemicals, we buy from them. If you do not have such an opportunity, it is not a problem. It is better to eat a vegetable from the greengrocer than not to eat one at all or to eat a cutlet.

One of our most common concerns may be the spraying of vegetables and fruit. There is a simple home method for removing any spray residue from the surface of vegetables and fruit. Leave the vegetables and fruit for a few minutes in a baking soda solution—about one tablespoon of baking soda per litre of water, giving a pH of approximately 10, sufficient for the hydrolysis of the chemical compounds used for spraying—then rinse the fruit or vegetable with clean water.

Sea salt and Himalayan salt
Since we have thrown away spices unnecessary for our bodies, such as refined salt, Vegeta, Jarzynka and Kucharek, we need to stock up on new ones. In natural food shops, we can buy Himalayan salt. It has a wonderful, deeper and richer flavour than sea salt and is a worthy substitute for Vegeta in most cases. Himalayan salt contains dozens of natural elements—micronutrients—essential for our bodies, including calcium, magnesium, lithium, boron, silicon, sulphur and others.

Nuts and seeds, as well as dried fruit
It is essential to have a supply of various
nuts at home: almonds, walnuts, hazelnuts, Brazil nuts, cashews, macadamias, pecans, coconut (shavings) and any others we like; seeds: flaxseed, sunflower, pumpkin, sesame and any others we like, as well as seeds for sprouts, which we do not eat directly but only after sprouting. Growing them is a real pleasure, and eating them even more so; and dried fruit: raisins, cranberries, goji berries, apricots, dates, cherries, figs, as well as other fruit: apples, pears, bananas, mangoes and any others we like. Let us buy unsulphured dried fruit. They are a fantastic substitute for sweets for children, an excellent addition to yoghurt, desserts and porridge, and a snack for young and old alike.

Natural and healthy sweeteners
We can use many products for sweetening, depending on taste and need, from dried dates and syrups—date, agave and maple—to birch sugar. Dates can be used to sweeten smoothies or desserts. In second place are xylitol or erythritol—natural polyols—followed by maple syrup, date syrup and bee honey—organic, raw, from a reliable source, not pasteurised “blends of honey” of unknown origin! There is also stevia. It is worth stocking up on a non-addictive substitute for cocoa—carob. It can be bought as a powder or spreadable cream. It is ideal for shakes, ice cream, yoghurt and desserts.

Teas
Black tea may be drunk occasionally, but remember that it is acidifying. Yerba mate, green tea and all herbal and fruit teas, on the other hand, have an alkalising effect. When buying fruit tea, pay attention to the ingredients—it may turn out to be black tea merely FLAVOURED with fruit. We do not buy such teas. It is important not to brew any tea with boiling water, because this will destroy the valuable ingredients it contains! The maximum temperature is 80 degrees. Rooibos tea is very valuable for children; it contains a broad range of beneficial compounds: iron, potassium, copper, calcium, manganese, magnesium, zinc, quercetin and flavonoids.

Fats
All oils we use must be cold-pressed and unrefined. First, buy a bottle of extra-virgin olive oil. In addition to extra-virgin olive oil, we can also stock up on cold-pressed flaxseed and coconut oil—the so-called coconut butter. There are many oils; depending on our needs and taste, we can change and try them—sesame, rapeseed, safflower, camelina, evening primrose, sunflower, poppy, hemp, rosehip, milk thistle, pumpkin seed, black cumin seed, walnut and grape-seed oils

Baking soda
It will be essential for rinsing pesticides from the surface of vegetables and fruit, as well as for countless other uses. There is no managing a household without baking soda!

Grains
We threw processed and sugared Nestle-style cereal flakes in the bin. What instead? We need to buy oat and spelt flakes, or other kinds in their natural form, without sugar or other additives. We can easily make muesli and delicious porridge for our children from them; by adding dried fruit, nuts and maple syrup, even the fussiest eater will not resist. Since we should eliminate white flour, it is useful to have spelt and wholemeal flour—wheat or rye—and wholegrain rice at home. There is currently a very wide choice of flours, so it is easy to replace white wheat flour.

Spices
Spices are the foundation of our healthy kitchen; with them, every dish will taste wonderful without Vegeta or stock cubes. Herbs will make dishes aromatic and tasty. Spices such as marjoram, cinnamon, cayenne pepper, basil, ginger, turmeric, fenugreek, lovage, caraway, coconut flakes, cloves and nutmeg, as well as any others you like, should not be missing. All natural spices contain plenty of valuable antioxidants.
