Preparing the batter for cherry muffins is a piece of cake. You will make it in just a few minutes. Start by mixing all the wet ingredients together: the oil, milk and eggs. Add the chocolate melted in a bain-marie—but make sure it has cooled first. Otherwise, you might accidentally cause the eggs to curdle. Using a mixer, blend everything until you have a smooth mixture. Then add the dry ingredients—the flour, sugar and baking powder. Mix again. Now you can add the cherries to the batter. Two hundred grams of fruit is more than enough for this amount of batter. Gently fold the batter with a spatula and begin spooning it into muffin tins lined with paper cases. Remember not to fill them completely, as the muffins will rise in the heat. Bake the muffins for 20 minutes in an oven preheated to 180 degrees. That is all—the dessert is ready!
