Exactly four ingredients—the shortest list possible. At the top of the list is cottage cheese, the star of healthy breakfasts. Surprised? I was. When, in response to my asking for the recipe for the cookies my friend had treated me to, I heard that they were made with white cheese, I could not hide my surprise. My friend treated me to the cookies, and the very first bite sent me straight to cookie heaven.

Cottage cheese cookies are light, wonderfully crisp, and very easy to make. At first glance, they resemble puff pastry. And that is precisely what is brilliant about them—real puff pastry requires laborious rolling and plenty of time. Here, you get minimum effort and a result worthy of the finest bakery. Sprinkled with brown sugar on top, cottage cheese cookies basically need no other additions. Well, perhaps a glass of milk or a good tea.

Super-Crispy Cottage Cheese Cookies

Even those who visit the kitchen less than rarely can manage this recipe. Simply crumble the cheese with a fork and mix it with soft butter that has stood at room temperature for an hour or two. If you enjoy vanilla flavors, add a little vanilla extract. Finally, add the flour and you are practically done. Knead the dough with a few movements, wrap it in foil, and chill it thoroughly.

I usually knead the dough for cottage cheese cookies in the evening. If it rests peacefully in the refrigerator, the cookies will be even crispier, so under no circumstances skip this step. Roll out the chilled dough to a thickness of half a centimeter and cut out small cookies. I use either a shot glass or small cookie cutters.

I brush each cookie with milk and sprinkle it with brown sugar. You can also use vanilla sugar or another flavored sugar. Do not skimp, because the cookies themselves contain not a gram of sugar. Bake with convection, which will make the cookies even crispier.

After baking, let the cookies cool quietly on a rack. I know, I know—they will be tempting, but it is truly worth waiting to get to their delicious center.

Cottage Cheese Cookies—Recipe

Preparation 10 min. Baking 15 min.

Ingredients:

  • 250 g full-fat or semi-fat cottage cheese
  • 200 g butter
  • 200 g flour
  • 1 teaspoon vanilla extract, optional
  • additionally, 5 tablespoons brown sugar

Method:

Put the cottage cheese in a bowl and crumble it with a fork. Add the soft butter and vanilla extract, and mix. Add the flour to the cheese mixture and quickly knead. Shape the dough into a ball. Wrap it in cling film and place it in the refrigerator for 6–8 hours, preferably overnight. Preheat the oven to 180 degrees. Roll out the dough to a thickness of half a centimeter. Use a shot glass or cookie cutter to cut out small cookies. Brush each cookie with milk and sprinkle generously with sugar. Bake for 15–17 minutes with convection. Set aside to cool completely.
