The season for wild garlic is very short. As soon as the sun begins to warm things up, it gives way to other plants. That makes it all the more worthwhile to make the most of this time—for both the flavor and the health benefits hidden in these inconspicuous leaves.

It is a true pharmacy, because wild garlic contains alliin, one of the most powerful bactericidal substances. When crushed, it transforms into allicin, which fights infections of the digestive and respiratory systems. And there is much more of it than in the familiar cloves of garlic. It also contains plenty of sulfur, which boosts immunity.

Scientists have found substances in wild garlic that counteract cancer, lower blood pressure, support the heart, help treat rheumatism and reduce cholesterol levels. There are also compounds that work better for the skin and hair than many a cosmetic.

And most importantly: wild garlic is delicious. Milder than classic garlic cloves, more subtle, yet also highly aromatic. It has a distinct grassy aftertaste that pairs beautifully with lettuce, asparagus and spring vegetables. You can add it to mayonnaise or hollandaise sauce. It tastes wonderful with simple pasta dishes, risotto and salads. Our imagination is the only limit.

It is also a way to make a quick and healthy lunch, as it requires virtually no effort. Potatoes give it its creaminess, celeriac adds spicy notes, and leek gives it character. They pair wonderfully with wild garlic.
