The origins of Italian pizza date back to ancient Rome, where a seasoned flatbread sprinkled with cheese was an everyday meal enjoyed daily—it was a kind of street food. It was only when the first tomatoes arrived from America that the modern phase of this dish began, and in the 19th century margherita was created—the model for restaurateurs today. There are many varieties of it in Italy, as each region prepares it in its own way; however, Neapolitan pizza was the one that became famous beyond the country’s borders. It is characterized by slightly crisp dough that is fluffy at the edges and thin in the middle, while the ingredients are always placed on top of the cheese—this is the main characteristic of Italian pizza. In the 20th century, Italian immigrants introduced a new style in New York—the American style. The dough is more elastic and crispy, making it possible to fold a slice in half and eat it more easily, even while on the go—this is why pizza is now the most popular street food there.
